1 small cucumber, seeded and chopped(1/2 cup)
1 3 1/4-ounce can tuna, drained and flaked or 1/2 cup flaked cooked fish
1/4 cup quick-cooking rice
1/4 cup water
1 teaspoon lemon juice
Dash garlic salt
1/4 cup shredded sharp American cheese (1 ounce)
In a 12-ounce casserole combine cucumber, tuna, or fish, uncooked rice, water, lemon juice, and garlic salt. Bake, covered, at 350 degrees till rice is cooked, about 25 minutes. Top with cheese. Bake, uncovered, till cheese melts, 2 to 3 minutes more. Makes 1 serving.
Microwave cooking directions: In a 12-ounce nonmetal casserole combine cucumber, tuna, or fish, uncooked rice, water, lemon juice, and garlic salt. Cook, covered with waxed paper, in a countertop microwave oven till rice is done, about 3 minutes. sprinkle with cheese,; micro-cook, uncovered, about 45 seconds longer.
